Before I changed the way that I eat, I was one of the many people obsessed with brunch. I’m not sure how you couldn’t be when brunch is just code for dessert and alcohol in the morning. These days I don’t spend as many Sunday mornings ordering mimosas and waffles. I’m still a huge proponent of more elaborate weekend breakfasts that feel a bit decadent. That’s how I came about creating this lovely, savory quiche.
Porcini mushrooms give this quiche an earthy, umami packed flavor punch that complements turkey quite well. I’m in love with shallots as a replacement for regular onions; they’re caramel goodness is pretty insane. The flavor payoff for this meal is pretty incredible. What I’m saying is, this quiche tastes like it’s a labor of love. In reality, you spend about 15 minutes in the kitchen, and the rest watching YouTube videos on your laptop drinking iced tea. Or maybe you do something more responsible with your time.
This combo of creamy and savory, while still being hands-off recipe makes it great for hosting brunch. I think it’ll blow your guests away. The quiche also stores well in the fridge, so making it part of your weekly meal prep is a no-brainer.
I chose turkey for this dish, but other poultry that you have on hand would work just as well. If you’re pressed for time, shredding up a supermarket rotisserie chicken will definitely do the trick. I won’t tell.
